Agar is contained in all algal species of the following orders: Gelidiales, Gracilariales, Ceramiales, and Rhodymeniales (Fredericq et al., 1996). However, the polysaccharide is traditionally obtained from red algae belonging to the genera Gracilaria, Ahnfeltia, Gelidium, and Pterocladiella.
