Correct answer is (c) It undergoes inversion in the configuration on hydrolysis. 

Initially sucrose is dextro but on hydrolysis it converts into laevo because hydrolysis product is glucose and fructose in which fructose has larger coefficient of laevorotation. This is why Sucrose go inversion in configuration on hydrolysis.
