a)Four nutritional contribution of fruits and vegetables are- 

  • Provide vitamins and minerals 
  • Good source of antioxidants and phytochemicals 
  • Provides soluble and insoluble dietary fibre 
  • Low in fat

b) Effect of acidic medium on

Chlorophyll –Turns yellow 

Betalains-Retains the colour 

Flavones –Retains white colour 

Anthocyanin-Turns red

c) Garlic is broken just before its use

As it tend to dry up once broken
