The electronic configuration of nitrogen is N(Z=7) = `1s^2 2s^2 2p^3`
It has 5 electrons in its valence shell, hence in ammonia molecule it completes its octet by sharing of three electrons with three H atom, hence, it has 8 electrons in its valence shell in ammonia.
