(i) Proteins consist of large number of amino acids linked to each other by peptide linkage, having 3‐ dimensional structure. Thus, proteins are biopolymers of amino acids.
(ii) When nature proteins are subjected to the action of heat, acids or alkalies, they are coagulated or precipitated. The protein in this state is said to be denatured. During denaturation process the water soluble form of globular protein change to water insoluble fibrous protein.
