Nitrogen is an inert gas which does not react easily with other elements. But oxygen reacts with food materials. To remove oxygen present in packing it is burned with Nitrogen. If there is no oxygen in the pack it prevents oxidation. Hence oil and fat containing food items are flushed with nitrogen.
