The moisture content of food is usually responsible for its spoilage. The higher the moisture in food, the more are the chances of bacterial and fungal growth in it. Salt has a characteristic of absorbing water. When salt is added to food, it takes up the excess moisture content, making it unavailable for micro¬organisms and thus, preventing their growth. In this manner, salt helps to prevent spoilage of food and acts as a preservative.
