1. Emulsions are colloidal solution in which a liquid is dispersed in another liquid.

2. There are two types of emulsions

  • Oil in water (0/W)
  • Water in Oil (W/O) 

3. Oil in Water : Oil dispersed in water

 e.g., mayonnaise. icecrearn.

Water in Oil: Water dispersed in Oil.

e.g., stiff grease, butter, cold cream.
