Shape of guard cells changes due to change in the amount of water in cells. Whenever there is excess of water cell becomes turgid and guard cells get opened for transpiration to take place. Also, when water is not in excess amount guard cells remains closed.

Therefore, shape of guard cells is determined by amount of water in cells.
