  • The digestive system is made up of the gastrointestinal tract also called the GI tract or digestive tract and the liver, pancreas, and gallbladder.
  • The gastric juice has an ionic strength of approx 100 mM and contains pepsin and gastric lipase.
  • Due to the action of pepsin, proteins are partially digested in the stomach, (although some proteins are resistant to pepsin action).

  • Stomach:
    • The upper muscle in the stomach relaxes to let food enter, and the lower muscle mixes food with digestive juice.
    • Glands in your stomach lining make stomach acid and enzymes that break down food.
    • Muscles of your stomach mix the food with these digestive juices.
    • As the bolus of food travels through the oesophagus to the stomach, no significant digestion of carbohydrates takes place.
    • The oesophagus produces no digestive enzymes but does produce mucous for lubrication.

  • The acidic environment in the stomach stops the action of the amylase enzyme.
  • Pepsin secreted by the stomach and trypsin and chymotrypsin secreted by the pancreas, break down food proteins into polypeptides that are then broken down by various exopeptidases and dipeptidases into amino acids.
