Saponification is a process involving the conversion of fat, oil or lipid into soap and alcohol, by the action of heating in the presence of an aqueous alkali (e.g., NaOH). 

Saponification (alkaline hydrolysis) of oils and fats gives glycerol and sodium salt of fatty acids, which is sodium palmitate.
