The human saliva contains an enzyme called salivary amylase, which breaks down the starch present in food into sugar. The digestion of starch (carbohydrates) begins in the mouth. In the mouth, salivary glands secrete saliva. Saliva is a watery fluid which contains an enzyme called salivary amylase which partially digests the starch and converts it into maltose sugar.
