Rohan went to the garden. He saw fruits were green when unripe but some fruits were beautifully coloured when ripe. How does this change occur and what is the importance of this change?

The change in colour of fruits on ripening is a chemical change. This change occurs due to formation of new enzymes in the fruits. The action of the enzymes causes the ripening.

Chlorophyll is broken down and sometimes new pigments are made which change the colour of the fruit. The acids are broken down so the fruit becomes neutral and not sour, the starch is broken down to sugars. All these changes make the fruit palatable.
